One of my really favourites to do around April fools day or whenever is to get a tiny bit of Scotch tape (or any clear tape) and cover the pins on the RJ45 plug on the patch lead between the victims PC and the data point (or switch), it's so subtle you can barely notice it even when you know it's there, for added fun do the same with their phone. The victim will lose all network (and phone if you go that route) connectivity, they'll spend ages trying to work out what's wrong and most likely get no where, just make sure you remove the tape before the admin/technician gets there so you're not wasting their time too!
